  1. Still frame

    This one goes out to the East Coast tonight.
Vanilla Amaretto Cocoa
Ingredients
1/4 cup cocoa powder
1 tablespoon granulated sugar
pinch kosher salt
3 cups whole milk
4 ounces milk chocolate chips
4 ounces bittersweet chocolate chips
2 teapoons vanilla extract
1 teaspoon espresso powder (or 1/2 cup brewed espresso)
3 ounces Amaretto
4 ounces whiskey
Marshmallows for garnish

Procedures
1 In medium saucepan, stir cocoa with sugar and salt. Stir in milk, milk chocolate, and bittersweet chocolate. Heat over medium heat until, stirring constantly, until chocolate is melted and mixture is hot. Gently whisk to completely homogenize mixture.

2 Add vanilla, espresso, Amaretto, and whiskey and stir to combine. Pour into glasses and serve with marshmallows.

    Apple Spiced Bourbon Toddies
INGREDIENTS

1 quart (4 cups) fresh apple cider
1 cinnamon stick
2 whole star anise, plus 4 more for garnish
Juice of 1 lemon
1 cup good-quality bourbon, or, if you must, whiskey
4 pats butter (optional)

DIRECTIONS

1. Place the cider, cinnamon, and star anise in a small saucepan and bring to a simmer over medium heat. Cook until the liquid has reduced by half and has intensified in flavor, about 10 minutes. Add the lemon juice and bourbon and stir until warmed through. If desired, place over low, low heat and cover partially to keep warm until needed.
2. Pour into warmed mugs or snifters and garnished with a cinnamon stick and star anise and, if desired, a pat of butter.

    Bacon, Bourbon, & Hazelnut Cocoa 
Ingredients
4 thick-cut slices of bacon
1/2 teaspoon corn starch
1/4 cup cocoa powder
1 tablespoon granulated sugar
pinch kosher salt
3 cups whole milk
4 ounces milk chocolate chips
4 ounces bittersweet chocolate chips
4 ounces Frangelico
4 ounces Bourbon
Whipped cream and chopped toasted hazelnuts for garnish
Procedures
1 Cook bacon in a large, heavy-bottomed skillet over medium-low heat until crisp and rendered. Transfer bacon to a paper towel-lined plate. Pour fat into a small bowl and stir in corn starch with a fork.
2 In medium saucepan, stir cocoa with sugar and salt. Stir in reserved bacon fat/corn starch mixture, milk, milk chocolate, and bittersweet chocolate. Heat over medium heat until, stirring constantly, until chocolate is melted and mixture is hot. Gently whisk to completely homogenize mixture.
3 Add Frangelico and bourbon. Pour into individual serving cups. Top with whipped cream, chopped toasted hazelnuts, and a strip of bacon. Serve immediately.

2 oz. bourbon  1 Tbsp. honeyhot waterlemon twistcinnamon stick
Stir honey and hot water in a mug until honey dissolves.  Add bourbon.  Twist lemon over glass.  Stir with cinnamon stick.
